“What we saw in Sonnda was an incredibly passionate and precise baker. Sonnda’s ability to marry the techniques and traditions of classic French pâtisserie to the very best of Scottish produce made her stand out clearly against the competition.

Her outstanding attention to detail and exquisite blend of flavours and textures make her work an absolute pleasure – on the eye and taste buds!”

Wine

Wine & Spirit Education Trust (WSET) Levels 1-3 in Wines & Spirits

Level 3: Awarded the Richard Paterson Trophy for the highest achievement in Scotland 2001

While the wine mention may seem odd in a healthy eating context, my wine education was an education in flavour. It taught me about the importance of balance of flavour, what that is and how it’s achieved. And it ignited my passion for flavour-pairing.

I bring both to my food and recipes and know they’re much the better for it.

Small amounts of polyphenol-rich red wine, drunk alongside food rather than on its own, are actually beneficial to gut health. So, if you’re a wine lover like me, wine can be part of a healthy diet and lifestyle. It’s all about how much, what and when you drink!
